Hen and Rooster makes canoe knives, congress, trapper knives, mini trapper knives, stockman knives, medium stockman knives, copperhead knives and many more.

With the use of 440 Stainless blades, solid brass liners, and nickel silver bolsters, many of the knives involve up to 125 single operations to complete assembly.
